Easy Healthy Cauliflower Chili Mac Lunch/Dinner (Under 20 Carbs!)
This SUPER EASY Cauliflower Chili Mac is so good. I was looking for some macro-friendly dinners and stumbled upon the recipe on Stronger U, but did make a few changes to up the fat because I wanted to stay full longer. I ate it for dinner the night I made it and then my husband and I both ended up eating it for lunch in the same week. It literally tastes like a taco in a bag / walking taco. You get the cheddar flavor that is just like Doritos & the turkey w/ chili seasoning and tomato sauce is almost like a sloppy joe mix. YUM!
One full recipe makes 4 HUGE servings. If you have children, this recipe could make enough for 2 adults and 4 kids in one sitting.
Also, it's so cheap! Often times these healthy recipes have ingredients you have to buy at a specialty store or you've never heard of, but this was all found at Aldi and Walmart. It was $16.53 for the recipe, which made 4 huge meals. $4 a serving?! Not bad! Here's your grocery list:
1 lb 93% lean ground turkey
2 8oz. cans tomato sauce
2 bags / boxes riced cauliflower
2 tbsp minced garlic
1 package chili seasoning mix
1 block 1/3 less fat cream cheese (room temp / soft)
2 tbsp cheddar powder
Brown your ground turkey in a skillet with a little olive oil. Add the minced garlic.
Microwave the riced cauliflower and let brown a little longer.
Get a BIG pot (it makes a lot!) and put the cauliflower in. Start heating over low heat.
Add the ground turkey and garlic mixture.
Add the chili mix, tomato sauce, cream cheese. Stir over low heat until the cream cheese is melted.
Add the cheddar powder.
Mix until completely worked in & then heat entire thing for another 5 mins over low heat, stirring often. Serve immediately!
