Copycat Taco Bell Chicken Quesadilla
You read that right. The only time I let myself indulge in a chicken quesadilla from Taco Bell is when I'm drunk and going through a drive through at 1am. So.... like never anymore. Because it is sooooo sinful, but that sauce is so good! (If you know, you know).

I found a copycat of the TB quesadilla sauce, lightened it up, found amazingly tasty low carb tortillas and made the best copycat Taco Bell Chicken Quesadilla for better macros! (At least for me, I am always coming up short in protein, watching my fat and carbs. And this is more protein and less of fat and carbs!). And MORE volume. (More food!)

Ingredients:
2 Fit & Active Low Carb Tortillas
(you can use Mission Carb Balance Tortillas if you don't have an Aldi nearby, normally can find at Walmart and Target. If you use these, add 16g carbs and 2g protein, minus 2g fat to the whole macro count).
5 oz cut up/cubed/shredded grilled chicken tenderloins
1/4 cup Mild Cheddar Shredded Cheese
Sauce:
1 tbsp Light Sour Cream
1 tbsp Light Miracle Whip
1/4 tsp Paprika
1/4 tsp Garlic Powder
1/4 tsp Onion Powder
1/2 tsp Ground Cumin
small dash Chili Powder
small dash Lime Juice (to taste)

Directions:
Put one of your tortillas on a piece of aluminum foil.
Mix all of the sauce ingredients together in a small bowl.
Spread 1/2 of sauce on to tortilla on aluminum foil.
Add 5 oz chicken on top of tortilla spread out.
Sprinkle cheese over chicken.
Spread other 1/2 of sauce on to other tortilla and then put on top of cheese to top the quesadilla.
Put quesadilla in air fryer for 4 mins, or put in over on "broil" for 4 mins or until cheese is melted.
Remove from foil, put on plate, cut into 4s & enjoy!
